MmmMmm…fresh mint and blueberries are the key ingredients to this twist on a common summer-sipper from 1785 Inn & Restaurant in New Hampshire. TGIF dolls!

1 dozen mint leaves
1 Tablespoon simple syrup
1 lemon quartered
1 cup ice
1½ ounces blueberry vodka
1 ounce of sparkling water
Muddle the mint and simple syrup together in a 16 ounce bar glass, squeeze the lemon quarters into the mixture, add the ice, blueberry vodka, and sparkling water. Stir well, pour into a 15-ounce hurricane glass, add a sprig of fresh mint on top, and serve with a cocktail straw. We infuse our own blueberry vodka by marinating blueberries in a good vodka for 6 to 8 weeks (1/3 blueberries & 2/3 vodka), then strain off the vodka and refrigerate it.
