Easy and Budget Friendly: One-Pan Sausage and Potatoes
Some recipes become favorites because they're impressively made and maybe even toiled over for hours. Others become favorites because they simply make life easier.
This is one of those recipes.
This easy one-pan sausage and potatoes recipe has become one of my favorite weeknight dinners because it's inexpensive, filling and easy to customize with whatever vegetables I have on hand.
It’s the kind of meal I reach for on busy weeknights when I don't want to spend an hour in the kitchen, dirty every dish I own or make another trip to the grocery store. Everything cooks together on one pan, cleanup is minimal and, best of all, it's easy to adapt based on what you already have in the refrigerator.
With grocery prices feeling higher than we'd all like, meals that stretch both your time and your budget are worth holding onto. Whether you're cooking for one or two, feeding a family or hoping for leftovers the next day, this recipe checks all the boxes.
Ingredients
1 package smoked sausage (I like to quarter the sausage then cut into bite-sized pieces)
4 medium potatoes, scrubbed and diced
1 sweet bell pepper, sliced
1 medium red onion, cut into chunks
1–2 cups shredded cheese (I usually use cheddar, but whatever you have on hand works just fine.)
Olive oil
Salt and pepper
Instructions
Preheat your oven to 350°F.
Add the sausage, potatoes, bell pepper and onion to a large sheet pan. Drizzle everything with a little olive oil, season generously with salt and pepper, then toss until the vegetables are evenly coated.
Bake until the potatoes are fork tender and the sausage is heated through, stirring once or twice during cooking so everything browns evenly.
Remove the pan from the oven, sprinkle with shredded cheese and return it to the oven for just a few minutes, until the cheese is melted and bubbly.
Serve immediately.
Tip:
The potatoes take the longest to cook, so try to dice them into bite-sized pieces. If they're too large, the vegetables and sausage can become overcooked while you're waiting for the potatoes to finish.
How to Make This One-Pan Dinner Even More Budget-Friendly
One of my favorite ways to make this meal even more economical is to use only half of the smoked sausage. Freeze the remaining half for another weeknight dinner or make this recipe again later in the week. You'll still have plenty of flavor while making your groceries go a little farther.
